Microwave Cake

Don't knock it till you have tried it... This is a simple recipe for a chocolate cake that is ready fast enough that even the kids won't mind waiting! Best if you put chocolate frosting and whipped topping on it!

Ingredients

    • 1 large coffee mug
    • 4 tablespoons plain flour (do not use self-rising)
    • 4 tablespoons sugar
    • 2 tablespoons baking cocoa
    • 1/4 teaspoon baking powder shopping list
    • 1 egg
    • 3 tablespoons milk
    • 3 tablespoons oil
    • 3 tablespoons chocolate chips (optional)
    • Small splash of vanilla
    • chocolate frosting (optional)
    • whipped topping (optional)
    • cherries (optional)

Preparation

Add dry ingredients to mug, & mix well. Then add egg, vanilla, milk and oil and mix well. Then add your chocolate chips (if using), and mix again.

Set mug in the microwave & cook for 2½ to 3 min at 1,000 watts (Total time is by user-discretion and will vary based on the microwave. The cake will rise over the top of the mug, but don't be alarmed!

Allow cake to cool a little and then drizzle with chocolate syrup and top with whipped topping and cherries.

Additional Notes

One variation would be to take the chips and instead of string them in, fill the mug about 2/3 full, add the chips and then add enough mix to cover the chips.

Another variation would be to use some alternate flavor chips or to use some frosting in with the mix.

Both of the above variations will make the taste of a lava cake.
